Bill Hill, or as he is affectionately known – Big Bill – is one of Wales’ most gregarious characters. He’s a great raconteur, a great fisherman and hunter, but above all he is a great chef, and Llansteffan is very lucky to have one of South Wales’ foremost chefs cooking to his hearts content in the middle of the village.
Having already become a legend at the Salutation Inn in Pontargothi during the 70s, Bill and his wife Judith moved here (supposedly!) for some peace and quiet. Having built up a fearsome reputation for their food and hospitality at the Salute it wasn’t long before Bill’s customers followed him in their thousands over the years to sample the culinary delights on offer at Yr Hen Dafarn. Nothing had changed – the food was still outstanding, the menus imaginative, and the welcome second to none, although now it is only available on Friday and Saturday nights. So don’t forget to book!!! Large parties for special occasions can sometimes be pre-booked on other nights by arrangement with Bill and Judith.
With he rest of the week free from cooking Bill can do what Bill loves best, namely fish and hunt for the fare that arrives at your table at the end of the week. Whatever is in season Bill is on it’s trail. Fresh sewin, salmon, mullet, sea bass and Llansteffan plaice are all caught locally by Bill in the estuary or on local rivers. Autumn and winter will find him shooting in Mid Wales and Scotland for game and venison, and Bill’s special relationshiop with local butchers ensures he has a steady supply of the best local produce money can buy. Back at home Judith’s special touch in the garden ensures a fantastic supply of succulent fresh vegetables and a huge and varied herb garden.
Yr Hen Dafarn’s reputation has spread far and wide beyond Welsh borders so don’t be surprised if you find yourselves comparing steaks with luminaries from the the worlds of celluloid and film and with some of the country’s sporting greats – they all beat a path to Bill and Judith’s door! Whilst Bill’s speciality is fish and game his steaks are legendary both in size and quality. The rest of the menu varies from Mediterranean, through Europe to delicacies from the Far East, but all have one common theme running through them – quality. Bill can cater for all tastes and most food allergies if given enough warning, so please phone ahead if you have any particular dietary requirements.
So, whether it’s a quiet supper for two or a party of twenty, Bill and Judith will cope with all your needs. There is a wide selection of quality wines, as well as various beers, lagers, and ciders. And as you would expect, a rather large selection of fine Scottish malt whisky as well. Slainte Mhath!
